The 2026 Indiana State Fair is serving nearly 50 new food creations, including something called the S’Mork.
Created by Nitro Hog BBQ, it combines slow-smoked pulled pork with the chocolate-and-marshmallow flavours of a traditional s’more, all served on a fried sugar biscuit.
But somehow, that’s just the beginning.
Visitors can also try a bacon jalapeño burger served between toasted honey buns, a Spam hot dog loaded with mac and cheese, Hot Cheeto fried Oreos, pickle pesto pizza and Dubai chocolate truffles dipped in batter and deep-fried. And because apparently eating all that makes you thirsty, there’s even corn dog beer, brewed using corn and smoked malt to recreate the flavour of the fairground favourite.
At this point, the Indiana State Fair isn’t serving lunch. It’s issuing challenges.
